The United States is a rich nation with highly developed industrial, medical, and public health
systems. Nonetheless, foodborne illness remains a common occurrence. CDC estimates that
roughly 48 million people (almost 1 in every 6 Americans) get sick with a foodborne illness each
year; of this number, 128,000 are hospitalized, and 3000 die of their illness. Of particular
concern are large scale outbreaks of foodborne illness associated with commercially distributed
food. Foods that have been implicated in such outbreaks in recent years include cantaloupe,
lettuce, berries, ground beef, bean sprouts, and tomatoes, to name a few.
In your essay, you are to discuss one cause of foodborne illness (for example, illnesses due to E.
coli O157:H7). After your introductory comments, you should succinctly summarize
appropriate statistics about the occurrence in the United States of the foodborne illness that
you choose. You should obtain these statistics from a reliable source such as CDC, the Food and
Drug Administration, or another scientifically reputable organization. After you present
summary statistical information that characterizes the public health problem, you should then
move to a more detailed discussion of why this problem occurs, using concepts and
terminology discussed in class and in our textbook. Using concepts and terminology from class
and the textbook, you should then discuss current control measures recommended and used
to prevent and control the foodborne illness that is the focus of your discussion. Finally, you
should propose a new control strategy or measure(s) that, if implemented, you believe would
reduce or eliminate the problem that you have characterized earlier in your essay. You might
want to cite one or more historical instances of the foodborne illness that is the focus of your paper and
note the lessons learned from that episode(s). Alternatively you might include a short anecdote
illustrating a typical situation in which the disease that is the focus of your paper occurs. Neither the
historical instance nor the anecdote are required but are mentioned here as examples of ways to make
the paper more interesting. Your proposal for improved prevention and control practice should
utilize terms and concepts from our textbook and from our class discussions. You should
explain how your proposal relates to the problem that you identified earlier in the paper, why
you believe that it will work, and how your proposed measure(s) fill gaps in the current public
health response. You are encouraged to be creative in your proposal for improvement and an
original discussion (i.e., your own words, not material copied from another source) is expected.
A satisfactory response to this assignment will typically occupy 3-5 typewritten pages, excluding
references, and formatted as noted in your syllabus. Be sure to include appropriate citations
for information and ideas obtained from others. If your paper runs slightly over five pages, this
will not be the basis for any deduction, but a paper in excess of 10 typewritten pages will be
considered out of scope with these instructions. Your paper will be graded according to the
rubric posted on the course Blackboard Learn website. Key elements for grading will be the
